Learn how to make ricotta cheese & fresh pasta, turning it into your very own homemade ricotta ravioli in this hands-on workshop.
The class includes learning the essentials of making an easy, egg-based pasta dough, how to sheet the dough, how to make ricotta cheese, and finally, how to cut your pasta into ricotta-filled ravioli.
We will review ingredients, tips & tricks during the mixing and sheeting steps, learn about the endless possibilities you can make from a pasta sheet, along with the steps to make ricotta. You will go home with fresh-made ricotta raviolis, sheeted and unsheeted pasta dough, and recipes for both the ricotta and pasta/raviolis.
Class will include:

2. Ingredients for the ravioli filling - making your own ricotta cheese.
3. Methods for sheeting the pasta.
4. Tips and tricks to fix your dough during mixing and sheeting steps.
5. The best dough thickness for the pasta you’re making.
6. Methods for making ravioli.
7. Filling and cutting ravioli.
8. The endless possibilities of ravioli filling.
9. The endless possibilities of pasta you can make from a pasta sheet.
Participants are welcome to bring their own wine or beverage to enjoy.
